The Bistro is run by head chef Paul Barrett. He began his career in the UK working in popular gastro-pubs and restaurants before opening Narina Trogon restaurant in Braamfontein, which is where he first met James Peech. His dishes are classy in a balanced way, and hark back to good old fashioned à la carte.
